This was my first sourdough pizza in a while. I think I might switch to sourdough exclusively.

    Sourdough is great because once you get everythjng temp controlled, it’ll be more consistent than added yeast, since they can weaken over time, or just go bad randomly.

    First time I used sourdough in my pizza, I was shocked by how strong the dough was

    If anyone is in northern NJ, Bucky’s in Chatham is all sourdough and it’s prime time. Legit thought OP was posting a pic of it (nice work OP!)

    You really think it’s worth the hassle ? My limited experience comparing it to 72 hour rise with IDY did not lend me to continuing to explore

    Anyone interested in sourdough pizza, it can be found impeccably done at Sour Joe’s in Concord NH. They serve square slices that are worth it. Been there 4+ times and it feels like toppings are intentionally placed.
